Mazapan de Pili

Ingredients:
3 cups pili nuts, blanched and ground
3 egg yolks
2 cups sugar
1 tsp. lemon or calamansi juice
2 cups evaporated milk
1/2 cup bread crumbs
1 cup water


Procedure:

  1. Put pili nuts, sugar, milk and water in a vat.
  2. Cook over medium heat for about 15 minutes until thick.
  3. Add egg, lemon or calamansi juice, and bread crumbs.
  4. Cook for another 10 minutes, stirring occasionally.
  5. Scoop small amounts and place separately in small paper wrappers.
  6. When the candies have been wrapped, put then in the oven for 10 minutes.
